Candida-safe recipes

This recipe page and its links are assembled specifically for those of you who have candida or autoimmune disorders. Thanks for coming here, and you should know that I will be continually adding recipes and links when I find foods that I know you can have on the candida program that I was on.  I realize there is a huge controversy about what is allowed and what is not, but I didn't write this program, I just followed it.  The stricter you can be with yourself, the better off you will be. If in doubt, don't eat it.  Watch for you OWN reactions to foods ... avoid anything that makes you feel worse. Keep a food journal; it will be your saviour if you run into problems.

REMEMBER:  Eggs are allowed (they are not dairy products).  Small amounts of avocado and tomatoes are allowed.  Many foods are "best avoided" but can be tolerated in small amounts and in moderation BUT must be well heated and eaten hot.

And yes, I did include a couple of desserts. Seems there is just not a lot out there about cooking with STEVIA - The cookbooks that I have found are excellent for diabetics, but almost every recipe has something that the candida sufferer cannot have (i.e. fruit) - at least on this version of the diet.

On book that I liked while on the program was The Body Ecology Diet, by Donna Gates. Click here you can go directly to the recipe of the month: http://www.bodyecologydiet.com/recipe.html.

I want you to know that Gates' book is similar to Crook's' "The Yeast Connection", insofar as it is very strict about the foods you can and cannot eat.  Dr. Piller's program is significantly easier to master because of the many foods that ARE allowed, providing they are eaten under the proper conditions (i.e. foods containing vinegar must be well heated and eaten hot). Therefore you will see recipes here that contain wheat, dairy, cheese, vinegar, and several other foods that are forbidden on the traditional candida program. I am living proof that this version of the diet works just fine, but I do believe that a large part of the success of the program had to do with the Formula SF-722 product that I took with each meal, as well as the probiotics. If you were to try to recover by diet alone, you would need to go by the strict version and it would take considerably longer. Be sure to read my entire website.

Please note that the Stevia that I use is an expensive ($630 per kilo in 1995) concentrated white powder. You may have to alter the amount of stevia, depending on the brand you are using. There is a product called Sweetvia which has no aftertaste and is available in single packets. I can vouch for this product; as I have tried it and it is excellent. Note - when this site was created, there was a link to www.sweetvia.com, however that link no longer exists.  I do not know what happened to the original Sweetvia company but a google search will take you to a Turkish website, which can be translated into English with a click.  I do not know if this is the same product or not.

I found a pure, no additives added, stevia powder on Amazon. Given its price, my bet  is that it's comparable to the stevia I can buy locally. Remember about pure stevia, though... if your product doesn't taste sweet enough for you, adding more is not going to make it taste sweeter. The opposite is true.  It will make it taste more bitter.  Less is better.  I'm talking about 1/4 teaspoon for an entire batch of, say, pudding or brownies. 

Be very careful about which brand of stevia you buy, as many have maltodextrin added. 

Now - about chocolate.
Ideally, caffeine should be avoided. 
And milk chocolate is generally sweet therefore you definitely cannot have that. If you're going to cheat on this program, you could use dark chocolate and use it VERY VERY sparingly.  Carob powder and carob chips are the general substitute for cocoa and chocolate chips, but I know they are an acquired taste.
The only reason I included recipes with chocolate in them is because most of the people who need to go on this program are attached to their desserts and that is what they find hardest to give up. I know I did. So I found a way to eat a modicum of dessert, including chocolate, that didn't compromise the effectiveness of the program.  If you can go "cold turkey" and completely avoid desserts, more power to you.  But if you "must", and you feel like you will positively die without having desserts, then try the following recipes. Remember, BEST IS TO AVOID them altogether.  I'm trying to make this program do-able so you'll stick with it.  :)
