Brownies (Variation)
1/2 teaspoon Stevia powder concentrate**
3 little packs of Sugar Twin or Equal
1/3 cup flour
1/3 cup rice flour
1/3 cup unsweetened cocoa
1/2 cup soft butter
2 eggs
1 1/2 teaspoon vanilla
1/3 cup grated zuccini
* The stevia powder I get is made by New Roots in Montreal, Canada. It is
extremely expensive ($630 per kilo, which is about $5 per tablespoon). You will
have to experiment with your own brand.
In bowl, beat butter, eggs, vanilla and zuccini. Add remaining ingredients
and mix. Spread evenly in 8-inch square pan. Bake at 350 " for about 10-13
minutes or until tester inserted in centre comes out clean.
Good texture if not overbaked, flavor is excellent.
I called these brownies instead of cake because they do not rise a lot. There
is a fair amount of butter and when it is first baked you will see the oil
around the edges of the pan. When it has cooled, you won't see this anymore, so
don't worry, unless you are one of those people who counts fat calories. When on
the candida diet, fat is the LEAST of your worries. They are delicious when
eaten warm.
Sauce
1/8 tsp stevia
1 square unsweetened chocolate
3 Tablespoons butter or margarine
3/4 cup skim milk
1 Tablespoon cornstarch
1/2 teaspoon vanilla
In small pot over medium heat, melt chocolate and butter. Add milk, stevia,
vanilla. Put cornstarch in a little dish and add some of the milk mixture and
blend together until no lumps remain, then pour it back into the pot. Cook until
slighly thickened.
Makes about 1 cup.
Now THIS is delicious!
