Rich Chocolate Tapioca Pudding
Have you ever tried adding 1 drop of peppermint oil to your
chocolate pudding? It makes a gourmet dessert.
1/3 cup cornstarch
3 Tbsp. Minute Tapioca
1/4 cup. cocoa or carob powder
3/4 tsp Stevia powder (concentrated powder from New Roots, Montreal)
2 cups. Rice Dream or skim milk
1/4 tsp. salt
1 egg divided to white & yolk
1 Tbsp. butter
1/2 cup milk to make paste
In a saucepan add 2 cups. Rice Dream or milk and tapioca, vanilla and
Stevia. Cook on medium heat, stirring now and again to prevent lumps.
Mix together, cornstarch, cocoa (or cocoa and carob)and
salt. Add enough Milk/Rice milk (whichever you prefer) to make a paste.
Now bring the tapioca in the saucepan to a higher heat, and when hot,
add a little to the cornstarch/cocoa mix. Now add this to the rest of
the tapioca in the saucepan, turn down to medium heat and stir
constantly until thickened. Serve hot or cold with whipped cream, or
sprinkled with ground almonds and sunflower seeds.
