This is what I have come up with so far. I can't quite put my finger on
what's missing. I had originally included 1/2 teaspoon of salt and 1 teaspoon of
baking powder but it was much too salty. So I cut the salt out altogether and
cut the baking powder down to 1/2 teaspoon. There's something missing, and I
think it's the salt. But I don't know whether it needs MORE stevia, or LESS.
It only makes a half recipe (i.e. a loaf pan instead of an 8 x 8 pan). I
encourage you to make it as is, then experiment to make it taste sweeter. Then
we can double the recipe and call it "final".
Torte
2 small eggs, divided
1/2 cup finely ground almonds
1/4 whole wheat flour
1/2 cup butter or margarine
1 square unsweetened chocolate
1/2 tsp. Baking powder
1/4 tsp Stevia powder
Beat two egg whites until light and fluffy, and put aside. In a small pot,
melt butter and chocolate together. In a small bowl, mix together dry
ingredients, add egg yolks, then add the chocolate mixture. Fold in egg whites.
I like to add two little packets of artificial sweetener (Twin, Equal). This
helps.
Put in loaf pan (Tupperware makes a loaf pan with a lid, I use the lid
portion only). Bake for 15-20 minutes in 300F degree oven.
Sauce
1/8 tsp stevia
1 square unsweetened chocolate
3 Tablespoons butter or margarine
3/4 cup skim milk
1 Tablespoon cornstarch
1/2 teaspoon vanilla
In small pot over medium heat, melt chocolate and butter. Add milk, stevia,
vanilla. Put cornstarch in a little dish and add some of the milk mixture and
blend together until no lumps remain, then pour it back into the pot. Cook until
slightly thickened.
Makes about 1 cup.
Now THIS is delicious!
