This is made with gelatin, so it does not have the texture of traditional fudge. But it's rich and chocolaty and will see you through that chocolate craving that you will have in the beginning. Remember that caffeine is not allowed, so if you want to try making it with melted carob chips, go ahead.

1 envelope gelatin
1/4 cup water
1 square unsweetened chocolate
1/8 teaspoon cinnamon
1/4 teaspoon stevia
1/4 cup water
3/4 cup Rice Dream (or skim milk if you are not allergic to dairy)
1/2 teaspoon vanilla
1/4 cup chopped nuts, optional

Soften gelatin in 1/4 cup water for five minutes. Melt chocolate with cinnamon and stevia, add Rice Dream or Milk, and water slowly. Add gelatin. Stir until dissolved. Remove from heat, add vanilla. Cool. When mixture begins to thicken, add nuts. Turn into cold small loaf pan (Tupperware makes a loaf pan with a lid, I use the lid). When firm cut into pieces.
